2nd HBin5 Bonus Bread

The second bonus bread for the Healthy Bread in 5 is a delicious Whole Grain Challah with Cranberries, Orange and Walnuts. I had leftover Cranberry Relish that I had frozen after Thanksgiving, so I used that in place of the orange zest, dried cranberries and nuts. It turned out great! I made half the recipe again - after all there are just two of us! Based on reviews from other HBin5 "Braiders" I added an extra teaspoon of Vital Wheat Gluten and used White Whole Wheat Flour. While I didn't get much of a rise in the oven, the texture and taste are wonderful. I'm wondering if the lower oven temp has something to do with the lack of "spring." Using half the recipe, I was able make two braids and one crown. Here they are before rising.

Look at that crumb, baby!! Moist and delicious.

Such nice even braids! Love the round loaf. How did you do that? Just make a long strand and wrap it around?

Mmmmm...your braids look delicious and moist. Did you use white whole wheat? I used regular whole wheat flour and my loaves were a little denser. Still tasted great though.

I love your idea of using the left over cranberry relish. I still have some left that I'll use when I make this again this coming weekend. I didn't have any problems with the rise but I swapped out the amounts for the AP and WW. You might try that! Great post!

Beautiful braid and great crumb. I didn't think about using the leftover cranberry relish! I didn't make mine since I didn't have the time but could have with the relish. Thanks!

Beautiful braids and I love the round swirl! I found the loaf I made after the bread was in the frig for 24 hours turned out much better than the first.

your bread is beautiful1 I love the little crown...great idea for that last little bit of dough. I had only made half the recipe and was about to do 2 loaves and one other litte thing as well.
